4 Great Gouda Recipes

To celebrate we’ve found four great recipes using this deliciously versatile cheese. Whether you are a wonderful chef worthy of your own Michelin star or a kitchen novice these recipes are easy to follow and sure to deliver tasty results!

Fondue – Popularised in the 60’s this Swedish classic was originally conceived as a way of using up left over cheese and stale bread but today it has gone slightly out of fashion, presumably because of its overtly sharing nature which doesn’t bode well in these overly sanitised times. However it is so easy to make and the wonderful melted concoction is pure heaven for cheese lovers. Replace the Gruyere cheese with Cornish Gouda for a local twist and simply serve with some chopped crunchy vegetables or thickly sliced sourdough bread. https://www.nigella.com/recipes/cheese-fondue

Chicken breast stuffed with Gouda – Once upon a time this would have been an ideal dinner party recipe (remember those!) but for now this would be a great family dinner. We love this retro dish for its simplicity and the Gouda makes the chicken lovely and moist while the prosciutto adds a touch of saltiness. Cornish Gouda Quesadillas – This recipe featured on Rick Stein’s Cornwall on BBC Two earlier this year and is a uniquely Cornish take on this Mexican street food staple. These make a delicious lunch or light supper and the sweet freshness of the caramelised apples combines well with the creamy nuttiness of the Gouda. Cheddar & Gouda Macaroni Cheese – This recipe is from Jamie Oliver and typically Italian orientated, for a Cornish twist swap the traditional Parmesan for Gouda and we like to add some local English cured streaky smoked bacon for extra flavour. Just dice a couple of the bacon rashers and add them in at the same time as the garlic. Macaroni Cheese can get a bad rap due to some badly made ready meal versions but made from scratch it is a completely different story. Powderham Food Festival

This Saturday 5th and Sunday 6th October Powderham Castle plays host to a foodie festival celebrating the finest South West food and drink producers.

Now in its eighth year the festival features cookery demonstrations from chefs Nick Evans from Rick Stein’s Cookery School, Jim Fisher from Exeter Cookery School and Great British Bake Off 2018 contestant Briony Williams. This year organisers will also be introducing four miniature ‘villages’ within the festival including Gin & Fizz, Feast of Fire, Wellness and Chocolate tents each with their own demonstrations and tasters.

Over 150 food and drink producers will be attending the event including our cornishblue_(3)favourite Cornish cheese producers the Cornish Cheese Co. and Cornish Gouda. The Cornish Cheese Co. have been making their award-winning cheese since 2001 and in 2010 their Cornish Blue scooped Champion Cheese at the World Cheese Awards. It is light and mild with a dense rich creaminess without the tang of traditional English blues and is best enjoyed young.
Cornish Gouda use milk from their own herd of Holstein cows and traditional Dutch cheese-making techniques to produce their ever popular Cornish Gouda. The medium Gouda is smooth and creamy with a distinct nutty flavour while the mature is rich and buttery with nods to indulgent caramel.

The Best Cornwall Cheeses! (in our opinion)

In 2017 Cornish Kern, made by Lynher Dairies, was voted as the World’s Best Cheese at the annual World Cheese Awards. As a relatively small dairy this was a huge achievement and got us thinking about other great cheeses originating from our neighbouring county, we’ve listed a few of our favourite Cornish cheeses to nibble on below.

Cornish Blue
Cornish Blue is made by the Cornish Cheese Company using local Cornish milk from a family farm on the edge of Bodmin Moor. The cheese differs from its traditional counterparts in that it is designed to be eaten when young, making its flavours much more mild, creamy and slightly sweet than its tangy cousins. The cheese production process is entirely carried out by hand by highly skilled cheesemakers, resulting in a delicious, crumbly blue cheese.

Miss Thymed
This creamy, delicate cheese is made by Whalesborough Cheese, a small batch artisan cheese makers based on the North Cornwall coast. Miss Thymed was created by taking their sweet, continental style Miss Muffet and blending it with Lemon & Thyme Cornish Sea Salt, creating a delicious citrus cheese perfectly complimented by nutty, savoury undertones.

Cornish Medium Gouda
This cheese is hand crafted by Giel Spierings and the skilled cheesemakers of the Cornish Gouda Company, based near Looe and producers of artisan cheeses. The cheese is made using rich milk from the farms own herd of Holstein Friesian cows and traditional Dutch cheese making techinques. It is matured for 5-6 months and is smooth and creamy with nutty flavours.

Garlic Yarg
Yarg is made by Lynher Dairies, one of the most successful artisan cheese makers in the country, who are based in Ponsanooth, Cornwall. This cheese is made to the same recipe as their award winning Yarg with the addition of wild garlic leaves which lends a gentle, fresh savoury flavour to the creamy, mild cheese as it matures.
